Apricot Fudge
Finally fudge that feels healthy (well sort of!). Try this unique twist on a traditional fudge recipe, using Super Wine Biscuits and dried apricots. To sweeten it up just that bit more, you could also try the orange icing we’ve suggested.

Instructions:
Apricot Fudge
1. In a microwave proof jug gently melt together the brown sugar and the condensed milk. Cool slightly.
2. Add this to the crushed biscuits and chopped apricots and mix well.
3. Spread into a greased 18cm shallow square tin. Refrigerate.
4. You can leave this plain or ice with orange icing.
Orange icing
1. Sift the icing sugar into a bowl.
2. Melt the butter and hot water together, stir into the icing sugar and beat to a smooth icing. Add more water to make thinner, if desired.
3. Add a few drops at a time of orange food colouring until the desired shade is reached.
1 Packet Griffin's Super Wine Biscuits, roughly crushed
½ Cup Brown Sugar
½ tin Condensed Milk
1 Cup Finely Chopped Dried Apricots
Orange icing
1 Cup Icing Sugar, sifted
1 Tbsp Butter, softened
3 Tbsp Hot Water (approx)
Orange Food Colouring
